Using Food as Medicine to Fight Inflammation

Wednesday, November 14 11:30-12:30 AM – SPEAKER SERIES (LECTURE HALL)

There is a lot of confusion about what it means to eat an anti-inflammatory diet.  In this presentation, Dr. Susan Blum will review and simplify the research, and offer simple guidelines that you can start using right away to choose food that reduces inflammation, supports good gut health, enhances detoxification and treats inflammatory conditions like arthritis.

Keynote Address: The Food-Immune Connection

Wednesday, November 14 12:30-2:00 PM – KEYNOTE LUNCHEON (BALLROOM)

The food you eat plays a critical role in helping your immune system stay balanced and healthy. It does this by providing nutrients that directly support immune cells, and indirectly by influencing your gut microbiome. In this presentation, Dr. Susan Blum and Chef David Bouley will explore the role of antioxidants, fiber, and foods that are fermented or cultured, in promoting optimal immune and gut function. Chef Bouley will also share how he uses ingredients to assemble a recipe that bring the power of function to every dish he creates.

Dr. Blum, an Assistant Clinical Professor in the Department of Preventive Medicine at the Icahn School of Medicine at Mount Sinai, has been treating, healing and preventing chronic diseases for nearly two decades.
