Some recipes become family traditions not just because they taste amazing, but because they help keep the people we love close to us, much like a grandmother’s cookies or a favorite holiday dish that can instantly bring back warm memories. This homemade protein bar recipe is one of those in our home. My late husband Neil was a true health food enthusiast, someone who loved organic ingredients, nutrient-dense snacks, and finding simple ways to fuel our family with real, wholesome food. In fact, he was my inspiration for creating WEforum. His encouragement to choose organic foods and grow an outdoor vegetable garden played a meaningful role in shaping our family’s approach to wellness.

His organic protein bar recipe has become one of our favorite things to make around his birthday, which happens to fall right in the holiday season. We prepare it together as a family, and it has become a small but meaningful way to remember and celebrate him. It is now a warm, nourishing tradition, our way of honoring him with something he loved.

For this recipe, I like using Wholesome Organic Vanilla Light Corn Syrup. It adds just the right amount of sweetness and helps the bars hold together without using conventional corn syrup.

Homemade Superfood Energy Bars: Protein Packed Treat for the Holiday Season

Servings: 12–16 bars

Ingredients

  • 1 cup rolled oats (or 1 cup brown rice crisps)
  • 1/2 cup dried blueberries
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/2 cup unsweetened coconut
  • 1/4 cup hemp seeds
  • 1/4 cup chia seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 2–3 tablespoons flaxseed (I usually add a generous sprinkle)
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/4 cup brown sugar (packed)
  • 1/4 cup organic corn syrup
  • 4 tsp butter

Instructions

In a large bowl, combine rolled oats (or brown rice crisps), dried fruit, coconut, and seeds.
In a saucepan, gently melt the peanut butter, butter, honey, brown sugar, and corn syrup over low heat, stirring continually.
Do not boil, this will harden the mixture.
Pour the warm peanut butter mixture over the dry ingredients and stir until fully combined. (If you use oats and the mixture feels a bit dry, simply add 1–2 extra tablespoons of peanut butter or 1 tablespoon of honey to help it bind together perfectly).
Press firmly into a lightly buttered 8×8 pan.
Refrigerate until set, then cut into squares.
