“WOLFE” AVOCADO BREAKFAST TOAST
PREP: 5 minutes
YIELD: 1 serving
- 1 slice of Artisan Bread
- ½ ripe Avocado
- 1 Egg
- ¼ Cucumber, sliced thin
- 1-2 slices of Prosciutto ham (optional)
- 1-2 Lime wedges
- 1 Garlic clove
- Red chili flakes
- Finishing salt
INSTRUCTIONS:

Place damp towel underneath cutting board.
- Thinly slice cucumber, set aside.
- Carefully slice avocado in half (lengthwise), set aside. Put avocado half with seed in sealed container in fridge.
- Peel outer skin of garlic clove.
- Slice lime for ¼ wedge.
- Heat non-stick skillet over medium heat. Once hot, place oil in pan.
- Carefully break egg open and gently let egg ooze onto hot skillet.
- Drop bread in the toaster, start toasting.
- Once egg has begun to firm up around the edges of the egg yolk, remove from the pan and set aside.
- Once toast is toasted to desired amount, rub the garlic clove up and down the toasted bread.
- Scoop out avocado using a spoon and spread onto toast.
- Gently smash with back of fork, spreading it out to the edges.
- Layer on prosciutto ham, cucumbers and fried egg.
- Squeeze lime, sprinkle finishing salt and red chili flakes.
