“Wolfe” Avocado Breakfast Toast

  • 1 slice of Artisan Bread
  • ½ ripe Avocado
  • 1 Egg
  • ¼ Cucumber, sliced thin
  • 1-2 slices of Prosciutto ham (optional)
  • 1-2 Lime wedges
  • 1 Garlic clove
  • Red chili flakes
  • Finishing salt



  1. Place damp towel underneath cutting board.
  2. Thinly slice cucumber, set aside.
  3. Carefully slice avocado in half (lengthwise), set aside. Put avocado half with seed in sealed container in fridge.
  4. Peel outer skin of garlic clove.
  5. Slice lime for ¼ wedge.
  6. Heat non-stick skillet over medium heat. Once hot, place oil in pan.
  7. Carefully break egg open and gently let egg ooze onto hot skillet.
  8. Drop bread in the toaster, start toasting.
  9. Once egg has begun to firm up around the edges of the egg yolk, remove from the pan and set aside.
  10. Once toast is toasted to desired amount, rub the garlic clove up and down the toasted bread.
  11. Scoop out avocado using a spoon and spread onto toast.
  12. Gently smash with back of fork, spreading it out to the edges.
  13. Layer on prosciutto ham, cucumbers and fried egg.
  14. Squeeze lime, sprinkle finishing salt and red chili flakes.
